Step 2: 2. Grind 18g coffee beans to fine consistency
Step 3: 3. Distribute grounds evenly in portafilter
Step 4: 4. Tamp with 30 lbs pressure (firm and level)
Step 5: 5. Lock portafilter into group head
Step 6: 6. Start extraction immediately
Step 7: 7. Extract 36g (2oz) in 25-30 seconds
Step 8: 8. Stop if extraction is too fast or slow
