- 2 lbs (0.9 kg) of pilsner malt
- 1 lb (0.45 kg) of acidulated malt
- 1 oz (28 g) of Hallertau hops (bittering)
- 1 oz (28 g) of Coriander seeds
- 1 oz (28 g) of salt
- Lactobacillus brevis or other souring bacteria (optional)
- Yeast (such as Safale US-05 or Wyeast 1007)
Step-by-Step Instructions
Mashing
Mash the grains at 152°F (66°C) for 60 minutes to create a rich, tart wort.
Lautering
Lauter the wort and sparge with enough water to reach a pre-boil volume of 6.5 gallons (25 L).
Boiling
Boil the wort for 60 minutes, adding the Hallertau hops at the beginning of the boil and the Coriander seeds and salt at the end of the boil.
Cooling and Transfer
Cool the wort to fermentation temperature (around 70°F or 21°C) and transfer it to a fermenter.
Fermentation
Pitch the yeast and allow the beer to ferment for 7-10 days, or until the fermentation is complete.
Souring (Optional)
If desired, add Lactobacillus brevis or other souring bacteria to the beer and allow it to sour for an additional 7-14 days.
